Fried Eggs with Beef Tallow (Seed Oil Free)

Ingredients:
  • 2 large eggs (preferably organic and pasture-raised)
  • 1 tbsp beef tallow (adjust based on your pan size and preference)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: Fresh herbs (like parsley or chives), hot sauce, or a sprinkle of smoked paprika for extra flavor
Instructions:
1. Prepare the Pan:
  • Heat a non-stick skillet or well-seasoned cast iron pan over medium-low heat.
  • Add 1 tablespoon of beef tallow to the pan. Allow it to melt completely and coat the bottom of the pan evenly. The tallow will melt quickly and give off a rich, savory aroma as it heats.
2. Crack the Eggs:
  • Crack the eggs carefully into a small bowl or ramekin (to avoid shell fragments).
  • Once the tallow is hot (but not smoking), gently slide each egg into the pan. If you prefer, you can crack the eggs directly into the pan, but doing it in a bowl first helps ensure the eggs stay intact.
3. Fry the Eggs:
  • Fried sunny-side up: Allow the eggs to cook undisturbed for about 2-4 minutes depending on how runny you like your yolks. You'll notice the whites starting to set while the yolks remain runny.
  • For crispy edges: If you like crispy edges, let the eggs cook a bit longer or tilt the pan slightly to allow the tallow to pool around the edges of the egg whites. This will give the whites a golden, crispy texture.
  • For over-easy or over-hard eggs: If you prefer your eggs flipped, wait until the whites are mostly set, then gently slide a spatula under the egg and flip it carefully. Cook for an additional 30 seconds to 1 minute for over-easy eggs or longer for over-hard eggs, depending on your preference.
4. Season and Serve:
  • Once the eggs are done to your liking, use a spatula to carefully lift them out of the pan and transfer them to a plate.
  • Season the eggs with salt and freshly cracked black pepper. You can also sprinkle on a little smoked paprika, chili flakes, or fresh herbs like parsley or chives for extra flavor.
5. Enjoy:
  • Serve your crispy, rich fried eggs with a side of avocado, sautéed greens, or bacon for a satisfying, seed oil-free breakfast or meal.

Tips:

  • Low and slow: Frying eggs on medium-low heat gives you better control and prevents overcooking the yolks. It also allows the tallow to infuse the eggs with flavor without burning the fat.
  • Use fresh eggs: Fresh eggs tend to hold their shape better and will give you prettier fried eggs with less spread.
  • Adjust for desired crispiness: If you love crispy edges, allow the eggs to cook a little longer in the tallow. You can also spoon a bit of the hot tallow over the whites to help them crisp up without flipping the eggs.
