Carne Asada Recipe (Seed Oil Free)

Ingredients:
For the Marinade:

  • 1/4 cup lime juice (about 2-3 limes)
  • 1/4 cup orange juice (about 1 orange)
  • 3 tbsp beef tallow, melted
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste

For the Carne Asada:

  • 1.5 - 2 lbs flank or skirt steak
  • Additional beef tallow for grilling or searing (1-2 tbsp)

Instructions:
Step 1: Marinate the Steak
1. Prepare the Marinade:

  • In a bowl, mix lime juice, orange juice, melted beef tallow, minced garlic, chopped cilantro, soy sauce, cumin, chili powder, smoked paprika, salt, and black pepper.

2. Marinate the Steak:

  • Place the steak in a shallow dish or resealable plastic bag and pour the marinade over it, ensuring the steak is fully coated.
  • Marinate in the fridge for at least 1 hour, preferably 4-6 hours, or overnight for maximum flavor.

Step 2: Cook the Carne Asada
1. Prepare to Grill or Sear:

  • For grilling, preheat the grill to medium-high heat.
  • For stovetop cooking, heat a cast-iron skillet over medium-high heat and add 1-2 tbsp of beef tallow until it’s hot and shimmering.

2. Cook the Steak:

  • Remove the steak from the marinade, letting any excess marinade drip off.
  • Place the steak on the grill or in the hot skillet. Cook for 3-5 minutes per side, depending on thickness, for medium-rare to medium. Adjust time as needed for desired doneness.

3. Rest the Steak:

  • Transfer the steak to a cutting board and let it rest for 5-10 minutes to retain juices.

Step 3: Slice and Serve
1. Slice the Steak:

  • Thinly slice the steak against the grain for maximum tenderness.

2. Serve:

  • Enjoy your carne asada as a main dish, or serve it in tacos, burritos, or bowls with your favorite toppings like guacamole, salsa, grilled peppers, or onions.

Tips:

  • Marinating the steak for at least a few hours enhances the flavors and helps tenderize the meat.
  • If you want a smoky char, use a grill or grill pan, but a cast-iron skillet works well too.
