Ingredients:
- 1-2 tsp beef tallow (for cooking)
- 2-3 large eggs
- Salt and black pepper, to taste
- 1/4 cup chopped veggies (such as diced bell peppers, mushrooms, spinach, or onions)
- 1/4 cup shredded cheese (cheddar, feta, or your preferred cheese)
- Optional toppings: chopped fresh herbs, diced avocado, salsa
Instructions:
1. Prepare the Eggs:
- In a small bowl, crack the eggs and whisk them until smooth. Add a pinch of salt and black pepper.
2. Cook the Vegetables:
- In a non-stick or cast iron skillet, heat the beef tallow over medium heat until melted.
- Add the veggies and sauté until they’re softened and lightly browned, about 2-3 minutes. Transfer the veggies to a plate and set aside.
3. Cook the Omelette:
- In the same skillet, add a little more beef tallow if needed, then pour in the whisked eggs, tilting the pan slightly to spread the eggs evenly.
- Allow the eggs to cook undisturbed for about 1-2 minutes, or until the edges begin to set.
4. Add the Fillings:
- Once the eggs are mostly set but still slightly runny in the center, add the cooked veggies and cheese on one side of the omelette.
5. Fold and Finish Cooking:
- Gently fold the omelette in half over the fillings. Cook for an additional 1-2 minutes until the cheese melts and the eggs are fully set.
6. Serve:
- Slide the omelette onto a plate and add any optional toppings. Serve warm and enjoy!
Tips:
- Avoid overcooking for a fluffy, tender omelette.
- Customize with your favorite veggies or protein (like cooked sausage or ham).
Enjoy this delicious, beef tallow-cooked omelette!
